A sweet snack that is ok for most eating plans

I hope your week is going well!  We are actually having some rain in San Diego, so that has been kind of nice.  I definitely prefer nice, sunny weather, but every once in a while, it's nice when it's cloudy and raining.  It' almost like it allows you to take it easy, stay inside, and relax.  We also really needed it.

 

Today, I just wanted to share one of my new favorite recipes with you. Since I'm on a cleanse and not able to have any sugar, I was trying to figure out something to satisfy my craving for sweets.  I thought about the flavored coconut chips that I love, but that also contain sugar, so I decided to make my own.  

 

Whether you are paleo, sugar free, low carb, low FODMAP (limit to 1/4 cup), gluten free, dairy free, soy free, vegan, or keto, these should be ok!  Of course, if you are watching your calories or fat, just remember to limit the amount that you eat because it's so easy to eat A LOT of these!  

 

Chocolate and Cinnamon Coconut Chips

1 cup unsweetened coconut chips

1 Tbsp raw cacao powder

1-2 tsp cinnamon

some type of sweetener (stevia, vanilla stevia, coconut sugar, etc.)

 

Place pan on medium heat.  Add coconut chips and let them toast for about 2 minutes - make sure to keep stirring them to avoid burning them.  You just want them to get a little brown.  You can add a little coconut oil next if you would like to coat the coconut chips.  I initially did this, but found that the toppings still stick without the oil.  After that, add the raw cacao, cinnamon, and sweetener.  You might want to mix them together before adding and you can play around with the amount.  If you're familiar with my recipes, I don't really measure much, so these are really just an estimate of what I used.  Once coated, remove from heat and place in a bowl or on a plate to let cool and to prevent burning.  Wait until they're cooled and enjoy.  I placed mine in the fridge to let them get cold quicker.
