A delicious and healthy alternative to Christmas cookies
I hope you are having a great week and are ready for the holidays! I am leaving for Europe tomorrow! It will be so nice to get away and spend some time with my family.
I know this is a busy time of year, so today I just wanted to share a recipe with you. I shared this last year, but they're so good that I thought I'd share it again. This time of year, there are so many treats around, making it hard to resist. These are made with clean ingredients, don't have any sugar, don't require any baking, will fill you up in a good way (not make you feel bloated), and taste just as good as cookies!
Peppermint Madness Protein Balls
Makes about 4 protein balls
1 scoop protein powder
3 dates, soaked (pit removed)
1/2 teaspoon peppermint extract
1/2 cup unsweetened shredded coconut
3 tablespoons coconut milk
1 tablespoon raw cacao nibs
Raw cacao powder (optional)
Combine all ingredients in a bowl--EXCLUDING the raw cacao powder. Line a tray with wax paper. Form the ingredients into little balls. Dust with raw cacao powder (optional). Add the balls to the tray, then put into the freezer for 30 minutes to form.
