I hope you are having a great week so far and have something fun planned for the weekend. It's now officially summer, so I hope you are enjoying the nice weather. We've been having June gloom here, so my neighborhood has been stuck under a blanket of clouds while the rest of San Diego was warm and sunny. The sun has been out since Monday though, which has been really nice. Now, it's starting to get hot!
Speaking of it officially being summer, this is the best time of the year to eat cold treats like ice cream and popsicles. They are delicious, but also contain a lot of sugar and other unhealthy ingredients. I wanted to share some healthier alternatives that you can easily make by yourself that will not cause you to pack on the pounds.
Banana "Ice Cream"
This is so easy to make. All you need to do is take a banana and slice it and place it in the freezer (or you can buy sliced bananas that are already frozen). Once it is frozen, place it in a blender and blend until it is ice cream consistency. You can also blend in other ingredients of your choice such as chocolate chips, nuts, nut butter, coconut, fruit, or whatever you like. When I made it, I added a little stevia liquid and some raw cacao nibs.
Slim Down Slush
Blend 1 cup of ice with 4 cups cubed watermelon until smooth. Enjoy as a drink or pour into popsicle molds (preferably BPA free) until frozen. You can also add mint or peppermint extract.
