A quick, easy, and delicious breakfast that you can make the night before
I hope you are doing well! I hope, wherever you are, that you are starting to get some good spring weather. It was so nice out last weekend, and I was able to go to brunch and spend the day by the beach. It was a beautiful day out and now I can really feel that summer is coming! I have also been spending some time experimenting with different breakfast ideas. I have always been someone who eats breakfast every day. I've always made time for it in my day. It is so important because it helps balance your blood sugars right from the start of the day, which can help with weight maintenance and food cravings. It really is the most important meal of the day. What about you? Do you eat breakfast? I have been eating smoothies for a few years now, and although I do still love them, I wanted to try something different. I also have been feeling hungry after eating them because I work out in the morning and probably burn more calories than are in my smoothie. So, I decided to try chia seed pudding for a little while. It's delicious, very filling, so easy to make, and you can make it the night before so all you have to do is grab it out of the fridge and add any toppings you might want. Chia seeds are a super food and they contain healthy fats, protein, and a lot of fiber, which is why they help make you feel full for longer. Today, I wanted to share one of the recipes that i made this week. It was so good and my favorite one that I've made so far. Strawberry Banana Chia Seed Pudding 1/2 cup non-dairy milk ( I used lite coconut milk from a can, but you can use full fat, almond, or whatever kind you prefer.) 3 frozen strawberries 1/2 banana 2 Tbsp chia seeds a few drops stevia liquid or honey (optional) splash of vanilla (I did not measure) chopped fresh strawberries The night before: blend non-dairy milk, frozen strawberries, 1/2 of the 1/2 banana, stevia/honey, and vanilla in a blender. Pour into a bowl. Stir in chia seeds. Place in fridge over night. The next morning: top with the rest of the banana sliced, chopped strawberries, and any other toppings of your choice. I also added coconut.
