Christmas cookie alternative


This is the time of the year when there are so many treats around for the holidays, which can be hard to resist at some times. I wanted to share some healthy cookie alternatives (that taste just as good) with you today. They are made with clean ingredients, are so easy to make, and don't even require baking! The two recipes I'm going to share with you are from my fall and summer cleanses. Peppermint Madness Protein Balls Makes about 4 protein balls 1 scoop protein powder 3 dates, soaked (pit removed) 1/2 teaspoon peppermint extract 1/2 cup unsweetened shredded coconut 3 tablespoons coconut milk 1 tablespoon raw cacao nibs Raw cacao powder (optional) Combine all ingredients in a bowl--EXCLUDING the raw cacao powder. Line a tray with wax paper. Form the ingredients into little balls. Dust with raw cacao powder (optional). Add the balls to the tray, then put into the freezer for 30 minutes to form. Cacao Bliss Protein Balls 3/4 cup dates, soaked 1 teaspoon vanilla extract 2 tablespoons raw cacao 2 tablespoons shredded coconut 1/2 cup raw sunflower seeds, preferably soaked (can also use sunbutter for a different flavor) Add all ingredients except for the shredded coconut into a food processor or high speed blender. Blend until well combined, about 1-2 minutes. Add in shredded coconut and process for another 30 seconds. Use a large spoon to scoop the mixture and roll them into balls. Serve fresh or refrigerate for 30 minutes before serving. I hope you enjoy these! The peppermint protein balls are my favorite, and sometimes it's difficult to only eat one!
