This is one of my favorite times of the year! I love the fall, and since it has been unusually cold in San Diego for this time of the year, it actually feels like fall. I remember last year it was almost unbearably hot until mid-October. In the last couple years, I've actually started to watch football on Sundays, and some of my friends will be having football parties (and pool days) every week, which makes Sunday a day to look forward to! I also love everything else that comes with fall (until it becomes too cold and I wish it was summer again)...Halloween, apple picking, my birthday, and everything pumpkin!
If you're anything like me, when you think of fall, you think of all of the pumpkin food...pumpkin bread, pumpkin soup, pumpkin smoothies, and most of all pumpkin spiced lattes! I didn't realize that the pumpkin spice latte was back at Starbucks already, but when I was there last week, I just had to get one! I usually just get black iced coffee, but I thought I would treat myself even though I don't necessarily like all of the ingredients that are in it. It's actually made with real pumpkin now, but it's still loaded with sugar! I got a tall made with coconut milk (which is also sweetened), and it still has 39 grams of sugar. So, I decided to make my own today that doesn't contain all of the sugar and unnatural ingredients. This is how I made it:
strong coffee(I just made coffee with the same amount of coffee I normally use and half the water)
2-3 Tbsp pureed pumpkin
1/4-1/2 tsp pumpkin pie spice
1/2 cup full fat coconut milk (you can also use lite if you prefer)
a few drops vanilla stevia liquid (you can also use 1/2-1 Tbsp honey, maple syrup, or coconut sugar, but it won't be sugar free and 1/4 tsp vanilla extract)
Brew coffee. Mix all other ingredients together in a pan on the stove with a whisk. You can play around with the ingredients and adjust them to your liking. Pour pumpkin mixture on top of coffee. If you have a milk frother, you can put the mixture in there or just froth a little more coconut milk to add on top. I also sprinkled a little cinnamon on top of mine.
Eating pumpkin has many health benefits. It is:
high in beta-carotene.
high in fiber.
high in vitamin C.
high in Potassium.
Because of the nutrients it contains, it is beneficial for vision and heart health, it may play a role in cancer prevention, and it may help with weight loss as the high fiber content will keep you feeling full for longer.
I wanted to share one more pumpkin recipe with you. This is one of my favorites! It is a recipe that is from my Eat Clean, Get Lean Fall Cleanse, which will be launching soon! It's a great breakfast option as it is filling, tastes great, and also contains some greens so you start your day off with some veggies!
Pumpkin Spice Smoothie
1 1/2 cups dairy free milk or water
1/2 can pumpkin puree
1/2 cup spinach
1 teaspoon vanilla extract
1/2 teaspoon no sugar pumpkin spice
Blend all ingredients together and enjoy!
